Vegan Aioli



Handful of almonds
2 big cloves garlic
4 tbsp olive oil
1 tbsp dijon mustard
salt/pepper
2 tbsp lemon juice

Preparation
* Let the almonds soak in boiling water for 1 hour. Once cooled the skin should be easy to remove so remove the skin and put the almonds in the blender.

Fry the garlic in 2 tbsp of olive oil until cooked. Put this in the blender, a small compartment if you have one.

Add 3 tbsp of water and mix the almonds well until it is a smooth paste.

Add the mustard, 2 tbsp lemon juice and 2 tbsp of olive oil and stir in.

Mix very well, add more water if necessary to achieve desired consistency.

Add salt and pepper to taste.

Voila! No animal products needed!
